A little over a year ago, Monserrath Flores Ruiz arrived in Charlotte from Veracruz, Mexico, with a suitcase full of dreams and an undeniable passion for baking. Today, her brand, Cherry Berry Pâtisserie, is already making its mark on the city, where her desserts not only delight the palate but also tell stories of tradition, hard work, and creativity.
From a young age, Monse knew that her place was in the kitchen. Inspired by her mother, grandmother, and sister—who always had a knack for seasoning—and by the TV shows that sparked her curiosity, she began to dream of becoming a chef. She studied culinary arts, and during her training, she discovered that her true passion was baking.
Her first cake—a mocha butter cake filled with coffee—was a real test: it took her a whole day to make, but the result confirmed that she was on the right track.
Moving to Charlotte meant starting from scratch. She faced the challenge of adapting to new ingredients, tweaking her recipes, and making a name for herself in an unfamiliar city. However, her determination and love for what she does have been the key to her success. “None of this has been easy, but when you love what you do, it’s all worth it,” she says with a smile.



Her creations stand out not only for their impeccable aesthetics but also for the unique flavor she achieves by incorporating traditional ingredients from Veracruz, such as vanilla and coffee. These elements not only allow her to maintain a connection to her homeland but also to offer her customers an authentic experience that reflects her Mexican roots.
Monse isn't afraid to experiment. She loves playing with flavors, textures, and shapes to create desserts that exceed her customers' expectations. "The greatest satisfaction comes when they tell me it's better than they expected. That fills me with excitement and the desire to keep going," she says.
Cherry Berry Pâtisserie also celebrates Mexican traditions with creations such as pan de muerto and rosca de reyes, which have been enthusiastically received by the local community. Monse fondly recalls the experience of making rosca de reyes in Charlotte, a moment that allowed her to reconnect with her roots and share a little piece of Mexico with those around her.
“Those traditions take on a different meaning when you’re far from home,” he reflects.


Cherry Berry's journey has only just begun, but her vision is clear. She dreams of opening her own bakery—a place where people can not only enjoy her desserts but also learn from her. For Monse, baking is an art form that is constantly evolving, and she is determined to keep growing and exploring new techniques, such as chocolate making and artistic pastry.
“I want people who try my desserts to know they’re mine, to recognize the quality and the love I put into every creation,” she says proudly.
Her work is already gaining recognition in Charlotte, where the name Cherry Berry is becoming increasingly well-known.
Monse is a prime example of how passion, perseverance, and cultural roots can transcend borders. In just over a year, she has made a name for herself in a new city, proving that when you pursue your dreams with dedication, anything is possible. And so, one dessert at a time, she is building a legacy that blends tradition, innovation, and flavor.
